# Expert Tips:

01 -
  • It comes together in 30 minutes flat, so you can go from craving Mediterranean food to actually eating it without losing your mind.
  • The grilled shrimp gets this incredible charred sweetness that makes everything else taste better by association.
  • You can prep everything ahead and assemble right before eating, which means less stress when friends show up hungry.
02 -
  • Don't marinate the shrimp longer than 15 minutes or the lemon juice will start cooking it, and you'll end up with a weird texture before it even hits the grill.
  • The dressing tastes better if you let it sit for a few minutes after whisking—it gives everything time to meld and become less sharp.
03 -
  • Don't crowd the grill—give each shrimp space so it gets actual heat contact instead of just sitting in steam.
  • Make the dressing first so the flavors can get cozy while you handle everything else, and it'll taste more integrated by serving time.
