02 - In a separate bowl, lightly beat egg yolks. Whisk a small amount (about 1/2 cup) of the hot milk mixture into the yolks to temper, then return the yolk mixture to the saucepan, whisking constantly.
03 - Cook for another 2–3 minutes, stirring constantly, until thick and smooth. Remove from heat and stir in butter and vanilla extract until fully incorporated. Transfer pudding to a bowl, press plastic wrap directly onto the surface, and let cool to room temperature, then refrigerate until chilled (about 1 hour).
04 - In a 2- to 2.5-quart serving dish or trifle bowl, layer one-third of the vanilla wafers, one-third of the banana slices, and one-third of the pudding. Repeat the layers twice, ending with pudding on top. Cover and refrigerate for at least 2 hours to allow flavors to meld.
05 - Just before serving, whip the heavy cream, powdered sugar, and vanilla extract together until soft peaks form. Spread or pipe over the top layer of pudding. Optionally garnish with extra wafers or banana slices. Serve chilled.
